Making Monster Cookies with my Electrolux Assistant

I should be sewing but got to eat. Cooking is sort of like sewing and quilting It takes lots of different ingredients, leftovers (scraps) and tools to be creative and come up with something good to eat. So I guess you could say the kitchen is another "Scrap Shak". I'm trying to show my Christmas present off. I got the Electrolux assistant magic mixer. I am now able to make my monster cookie recipe all in the same bowl.


In the video I said the bowl was 8 quart but it is only 7.4.  I chose the older model right before the newer ones were available.  I did so at my husband's advise.  It is a bit heavier which might mean they used better materials. And there was an extra year on the warranty.  The bowl on the new mixer is 8 quarts and only had a 2 year warranty.  It would be nice to have that extra space as you can see in my video but there was plenty of room to do this recipe.  I make Monster Cookies every year at Christmas and also at other times when we need lots of cookies.  It has become a family tradition to make this recipe but it so cumbersome to mix all this with a portable hand mixer and by hand.  My older Oster bowl was not big enough for the whole process.  The liquid ingredients came all the way to the top.  We would then divide it up and mix in the peanut butter, oats and candy by hand.  The cooks have problems mixing for very long so we would call in the men to help us stir.  We won't have to do that any more.  And we can still have our cookies.  I think that is a nice Christmas present for the whole family not just me.

 



Monster Cookies
A Christmas Family Tradition

1 dozen eggs
1 lb butter, softened
3 lbs peanut butter
2 lbs brown sugar
4 cups sugar
1 Tsp white corn syrup
1 Tbs vanilla
8 tsp soda
42 oz oatmeal quick kind
12 oz chocolate chips
16 oz M&M,s

Mix all but last 3 ingredients until smooth with hand mixer in a super large bowl then add oats and candy and chips by hand. I use a melon scoop (1 Tbs) to measure out dough. Place on greased cookie sheet and Bake at 350 for 10 minutes or until golden brown or 325 for 12 minutes. Cool for 2 minutes before transferring off pan. I have halved the recipe and it worked wonderfully! Don't eat too many at one time. Enjoy! Makes about 18 dozen.

I discovered this recipe on a mission trip to Oregon.  The ladies at the church made them for us and they were awesome.  Every year since then we make at least one batch at Christmas.  We became grandparents to a 9 year old boy and 11 year old girl about that same time.  Christopher loved them and the idea of making cookies together. He is the one that said we should do this every year.  So he is the one who started this family tradition.

Christopher is all grown up now and is nowhere to be found when we are making cookies.  But thanks anyway for starting this great family tradition.

There is enough dough to divide up and share with the family.  There is no way I would bake all these myself.  We bake a few to eat right now after we get the batch done and then divide the rest among the family.  With this batch, I bought the peanut butter in 1 pound jars.  I didn't wash the jars just put the cookie dough in the jar.  The recipients were tickled to get them.  Lots of people eat cookie dough raw so they can spoon out a couple of bites or bake themselves a few cookies.  It works really good.  You can use Ziploc bags or plastic containers or find some other creative way to share your dough. The dough keeps well in the fridge.  Just take out and let it warm up a bit before baking.

I like to make these for mission trips and for the hunters who are off in the woods trying to kill a deer. They are better than an energy bar.

  3. Thanking the bowl was kinda dumb and I should have said thank you, Electrolux! I will try to follow up with pictures of the dough and the next batch of baked cookies. We have already eaten the first round.
